You should be fine, it does take both hands to turn the knuckle when properly adjusted. Did you apply some grease on the bronze bearing when assembling the knuckle, if not squirt some in and rotate the knuckle? You don't want them too lose or you'll have the death wobble which is REALLY not good. They will loosen a bit once you get it on the road from the weight of the truck and pounding from pot holes.
